Makes 2 loaves.

3 cups flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 cup chopped walnuts
3 eggs
2 cups sugar
1 cup vegetable oil
2 tsp. vanilla
2 cups grated zucchini

Stir dry ingredients together. Add remaining ingredients, beating well after each addition. Pour batter into 2 well greased bread pans. Bake at 350F for at least 1 hour.
