1 1/2 cup vegetable oil
2 cups sugar
4 eggs
1 cup mashed carrots or 2 jars of Jr. size baby food
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1 small can crushed pineapple (drained)
1 cup chopped nuts, or raisins

Grease and flour angel or bundt pan. Beat oil, sugar and eggs together until fluffy, add other ingredients and mix well. Pour into pan and bake for 1 hour at 350F. Cool in pan for 30 minutes, remove and cool longer.

Icing:
2 sticks margarine or butter
1 box confectioners' sugar
8 oz. cream cheese
2 tsp. vanilla

Blend together, frost cake when cool.
