The cheese sauce has a nice nip to it. Cut in wedges to serve.

2 lbs. large head of cauliflower, left whole, leaves removed
Boiling salted water

Cheee Sauce:
3 tbsp. butter or hard margarine
3 tbsp. all purpose flour
1/2 tsp. salt
1/4 tsp. paprika
Cayenne pepper, just a pinch
2 cups milk
1 cup grated sharp cheddar cheese
Serves 6 to 8
Cook cauliflower in large saucepan in 2" boiling salted water until tender.
Drain.

Cheese Sauce:
Melt butter in saucepan.
Mix in flour, salt, paprika and cayenne.
Stir in milk until it boils and thickens.
Add cheese.
Stir until it melts.
Place whole cauliflower in serving bowl.
Pour cheese sauce over top.
