2 cups rolled oats (not quick cook)
1 cup chopped OR whole unsalted peanuts
1/2 cup shredded coconut-sweetened or unsweetened
1/2 cup raisins
1/4 cup sunflower seeds-unsalted
1/4 cup pumpkin seeds-unsalted
1 cup peanut butter
1 cup light brown sugar-packed
1/3 cup unsalted butter(or margarine)
2 tsp Vanilla
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 large egg

1. Pre heat oven to 350 degrees F and grease and line a 9" square pan with parchment paper so it over hangs the sides of the pans.
2. Toss oats, peanuts, coconut, raisins, sunflower seeds, pumpkin seeds together in a bowl.
3. in a pot over medium/low heat, stir in Peanut butter, brown sugar, butter, vanilla, spices and salt until melted.
4. Pour melted mixture over oat base and stir until blended. Stir in egg and spread granola into prepaired pan. Pat down and make flat.
5. Bake for 30 mins, then cool for 20 mins, chill for 2 hours .
Lift granola out of pan with parchment paper and cut into bars. Should make 24 bars.

YUMMY. I used a store made trail mix with cranberries and raisins and a whole bunch of different nuts instead of using individual nuts and raisins. I added 2 cups of the pre mixed trail mix. I still added the 1/2 cup of coconut.
