Ingredients:

8 prepared crepes
4 oz. reduced-fat cream cheese, cut into small pieces
1 cup fat-free milk or unsweetened soy milk
1 pkg. (4 serving size) sugar-free instant chocolate pudding mix
3 cups strawberries, sliced

Preparation:

Preheat oven to 400F.

Instructions:

Invert eight 6oz. custard cups on a baking sheet.
Coat the outside of the cups with cooking spray.
Drape a crepe over each cup.
Coat the crepes with cooking spray.
Bake for 20 minutes.
Turn off the oven and let the crepes stand in the oven for 30 minutes, or until crisp.
Carefully lift the crepes from the custard cups and place on a rack to cool.
In a food processor or blender, combine the cream cheese, milk, and pudding mix.
Process until smooth.
To serve, place each crepe cup, right side up, on a dessert plate.
Spoon a layer of strawberries in the bottom of each.
Divide the pudding among the cups and top with the remaining strawberries.
