Ingredients:

3/4 cup sweetened condensed milk
1 tbsp. + 1 tsp. lemon juice
2 cups fat free vanilla yogurt
1/2 cup reduced fat sour cream
1 tsp. vanilla extract
1/3 cup cold water
1 envelope unflavored gelatin
4 large bananas
20 reduced fat vanilla wafers

Instructions:

In a large bowl, whisk the condensed milk with 1 tbsp. of the lemon juice until slightly thickened.
Whisk in the yogurt, sour cream, and vanilla until smooth.
Pour the water into a small saucepan.
Sprinkle with the gelatin and let soften for 2 minutes.
Cook over medium heat, stirring constantly, for 1 to 2 minutes, or until the gelatin is completely dissolved and the mixture is heated through.
Stir into the yogurt mixture.
Slice 3 of the bananas into 1/4" rounds.
Drizzle with the remaining 1 tsp. lemon juice.
Fold into the pudding.
Pour into 8 dessert glasses, cover, and refrigerate for at least 2 hours, or until the pudding is set.
To serve, thinly slice the remaining banana.
Arrange the slices and the vanilla wafers on top of the pudding.
