10 cups tomatoes, peeled and chopped
1 large onion, chopped
6 Anaheim Peppers, Seeded and chopped
2 Pasilla Peppers, Seeded and chopped
Add Serrano Peppers as desired for more heat
4 heaping tsp. chopped garlic
1\4 cup cider vinegar
1 tbs. salt
1\2 tsp. cumin
1\2 tsp. Cilantro (dry flakes) or fresh is better (2 tbs.+)
2 tbs. sugar

Cook until liquid is reduced to desired consistency. Stir frequently to prevent scorching. Freeze in containers.
