Yield: 26 ounces
Ingredients:
3/4 fluid ounce Brandy
1 1/2 ounces Golden raisins
9 ounces Semisweet chocolate
7 ounces Unsalted butter
5 Egg yolks
5 Egg whites
Instructions:
1. Combine the brandy and raisins in a small saucepan and warm over low heat. Reserve.

2. Chop the chocolate into small pieces and melt with the butter over a bain marie. Remove from the heat and stir in the raisins and brandy. Whisk in the yolks until combined.

3. Whisk the egg whites until soft peaks form. Gently fold the whites into chocolate mixture in two stages.

4. Yield: 1 lb. 10 oz.

Yield: 26 ounces
