Pronounced WAH-sul or WAH-sayl. A warming winter beverage any way you say it!

2 cinnamon sticks (4" each)
12 whole allspice
1 peel of small orange, white pith removed, chopped
1 piece of peeled gingerroot (about 1"), chopped
12 cups apple cider
1/3 cup liquid honey (optional)
Serves 12
Place cinnamon sticks and allspice in small plastic bag.
Pound with hammer or meat mallet until crushed.
Transfer to 6" square double layer of cheesecloth.
Add orange peel and ginger.
Tie cheesecloth with string to enclose spices.
Pour apple cider into 4 quart clow cooker.
Add honey.
Stir.
Add spice bag.
Cook on low for about 6 hours or on high for about 3 hours until fragrant.
Remove and discard spice bag.
Makes about 12 1/2 cups.

Variation (with alcohol):
Add 1 cup brandy or apple brandy near end of cooking time.
