6 limes 6
4 oz sugar 115 g
3 cups boiling water 700 mL
pinch of salt
lime slices, to serve

Cut each lime in half and squeeze juice.

Place skins in a jug, then stir in sugar followed by boiling water. Cover and leave for 15 minutes.

Stir in salt. Strain into another jug and add lime juice. Leave to cool, then cover and chill. Serve over ice with lime slices.
