Lemon Garlic Alaska Pollock

2 tablespoons butter
2 teaspoons minced garlic
1 teaspoon lemon pepper
2 4-ounce Alaska pollock fillets (4 to 6 ounces each)
Lemon wedges
Servings: 2
Melt butter in large skillet over medium-high heat. Stir in garlic. Season pollock fillets on both sides with lemon pepper. Place fillets in pan and cook for 10 minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork. Flip fillets halfway through cooking to brown on both sides. Sprinkle with lemon juice before serving.

Notes: *If desired, olive oil may be substituted for butter.
