1 1/2 lb green cabbage (1 -medium cabbage), finely Shredded
1 med onion, grated
2 Tbsp fresh parsley, Chopped
1/4 to 1/3 cup olive oil, to taste
3 Tbsp wine vinegar, to taste
1 tsp sugar or honey
salt and pepper, to taste
1 green bell pepper cut in thin rings, for -garnish
In a large bowl, combine cabbage, onion, and parsley. In a small bowl whisk together oil, vinegar, sugar or honey, salt, and ground pepper. Pour dressing over cabbage and toss until coated thoroughly. Arrange bell pepper rings on top. Cover and chill before serving.
