Swordfish steaks are marinated in a heated mixture of raspberries, raspberry vinegar, honey and herbs, then grilled and sprinkled with lime.

* 2 cups fresh raspberries
* 2/3 cup raspberry vinegar
* 1 tbsp honey
* 1/2 cup olive oil
* 1 tsp pepper
* 1 tbsp thyme
* 1 tbsp sage
* Swordfish steaks for 4
* 2 limes
* Salt, to taste
Servings: 4
In a saucepan bring raspberries and raspberry vinegar to a boil. Once boiling, add honey; cook and stir about 1 minute. Remove from heat and add oil, pepper and herbs to saucepan and stir. Let cool a few minutes. Place swordfish steaks in a glass casserole dish and pour marinade over steaks. Cover and marinate up to 2 hours, turning once or twice. Grill on medium or medium-low for 5-7 minutes per side. Adjust taste with salt and sprinkle with lime juice.



Notes: Grills and grill settings can vary so 5-7 minutes is suggested, but use your eyes, ears and nose, to know when the fish is ready.
