Twice-Baked Potatoes

Heat oven to 375F. Rub 4 large baking potatoes with shortening; prick. Bake 1 to 1 1/4 hours. Increase oven temperature to 400F. Cut slice from top of each potato; scoop out inside. Mash potatoes.

Add 1/3 to 1/2 cup milk in small amounts, beating after each addition. Add 1/4 cup soft butter, 1/2 tsp. salt and dash pepper; beat until potatoes are fluffy. Fill potato shells; sprinkle with shredded cheese. Bake 20 minutes or until golden brown.
