6 medium Potatoes, Peeled & Chopped
Water, Hot
1 teaspoon Salt
1 Egg, Slightly Beaten
4 tablespoon Milk
4 tablespoon Butter, Softened
1 teaspoon Salt
1 dash Pepper
1 pinch Paprika

In a deep, 2-quart microwaveable casserole place potatoes and hot water to cover. Sprinkle with salt. Heat, uncovered, in microwave oven 12 minutes to 18 minutes or until potatoes are fork tender. Drain excess water. Partially mash potatoes with a potato masher. Add egg, milk, butter or margarine, remaining salt and pepper. Beat with electric mixer until smooth. Place in a heat resistant, non-metallic serving dish and sprinkle with paprika. Heat, uncovered, in microwave oven 4 minutes.
 
Top
