Sugar Mice For Christmas

About 3 cups icing sugar
1 egg white
Very little red food coloring
A little peppermint food flavoring
Short lengths of clean string

Put egg white in bowl and add color and flavor.
Beat together for a few seconds.
Gradually add icing sugar until you have a smooth, stiff mixture which will be easily shaped into balls.
Add more icing sugar if necessary.
Cover with a damp cloth to prevent drying out.
Remove small piece, roll into a ball.
Put on waxed paper, pat down a little to flatten bottom, squeeze one end to make a pointed nose.
Make a hole at round end for tail (string), and three holes for nose and eyes.
For ears, roll two tiny balls, flatten and pinch into shape.
Press into place.
When dry, put into small baking cups.
