Grilled Lamb Fillet with Apple Almond Compote

4 lbs lamb fillet, cleaned

Apple/almond compote
1.5 lb sugar
2 lb apple (net)
10 oz almonds
7 oz vinegar
1 good pinch rosemary

9 oz butter

=Bring sugar to caramel, add apples, then almonds. Cook 1 min. Add vinegar, cook 1 min. Add rest of ingredients. If not serving right away wait until service to add butter.

Grill lamb fillets. Either slice or serve whole on a bed of the compote
