=Wrap the boneless lamb loin in a roll around the kidneys, then wrap in bacon. At this point the lamb can be either partially roasted, sliced and finished or roasted, sliced and served.
Refire with a bit of stilton and breadcrumb on top, serve on a bed of sauted spinach with stilton demi-glace.
