Courgettes with Dill

¼ cup/60ml/2fl oz olive oil
2 tbsp/25g/ 1 oz butter
1 onion, chopped
1 garlic, crushed
450g/1 lb courgettes topped, tailed and sliced in thickish rounds
salt and freshly ground black pepper
2 tsp/l0ml paprika
1 tbsp/15ml dill, chopped (not the stalks)
1 small tub soured cream
serves 4
1-Heat oil and butter in a large frying pan. Cook the onion and garlic gently until soft. Turn up
the heat.

2-Add the courgettes, garlic and black pepper and toss.

3-Cook for 5-10 minutes, stirring to cook both sides of the courgette slices.

4-When browning, add the paprika, dill and soured cream. Season and serve.
