Roasted Aubergine

1 large aubergine
1 small onion, finely chopped
1-2 green chillis, finely chopped
½ tsp/2.5ml salt 2-3 tbsp/30-45 ml mustard oil
Serves 4
1-Place the aubergine under a pre-heated grill for about 15 minutes, turning frequently, until the
skin becomes black and the flesh soft.

2-Peel the skin and mash the flesh.

3-Add the rest of the ingredients to the mashed aubergine and mix thoroughly.
