Black eyed peas with onions

1 good cup/ 200g/7oz black eyed peas, washed
5 cups water
2 tbsp/30ml oil
1 large onion, finely chopped
2 cloves garlic, crushed
¼ in/0.5cm root ginger, grated
1-2 green chillis, finely chopped
½ tsp/2.5mi salt
1 tsp/5ml molasses
Serves 4-6
1-Soak the beans in the water overnight.

2-Boil the beans in the water and then cover and simmer for I hour until tender. Drain.

3-Heat the oil in a large saucepan and fry the onion, garlic, ginger and chilli until the onions are
soft. Add the beans, salt and molasses and cook until all the moisture is absorbed, about 15
minutes. Serve with Baktoras.
