3 3/4 cups milk, scalded
20 ounces bread cubes, soft
2 pounds eggs (about 18), beaten
10 pounds salmon, flaked
1 ounce salt (1 1/2 tbsp)
1 teaspoon paprika
1 teaspoon white pepper
3 ounces chopped onions
1/2 cup lemon juice
Servings: 50
1. Mix milk and bread cubes.

2. Add eggs to milk and bread mixture.

3. Add salmon and other ingredients. Mix lightly. Scale salmon mixture into five greased 5x9-inch loaf pans, 2 lb 14 oz per pan.

4. Bake at 325°F for 1-1 1/2 hours or until internal temperature reaches 180°F.


Yield: 5 loaves 5x9 inches
