Recipe Feeder
8 oz. can beets, drained, reserving juice
1 T. cornstarch
3 T. sugar
1/2 c. cider vinegar

Blend cornstarch and sugar together in a saucepan until blended well. Add vinegar then juice from drained beets. Cook over low heat, stirring constantly, until thickened and takes on a clear appearance. Add beets and stir to coat well. Continue to heat until until beets are warmed.

Notes: Be careful on the heat as it will scorch if too hot. I love to add some grated orange rind to the pan for a burst of orange flavor. This cooks quickly and will reheat well in the microwave. I use the baby whole beets rather than the sliced. Enjoy!
