Seasoned Fresh Green or Wax Beans

11 pounds fresh green or wax beans (AP) (10 lb EP) (11 to 12 lb)
4 ounces margarine, melted
1 ounce salt (1 1/2 tbsp)

1. Wash beans. Trim ends. Cut or break into 1-inch pieces. Steam or boil.

2. Pour margarine over cooked beans and sprinkle with salt. If boiling the beans, add salt to cooking water.

Southern-Style Green Beans. Cut 1 lb 8 oz bacon into small pieces. Add 6 oz chopped onion and sauté until onion is lightly browned. Add to hot, drained green beans. Good served with ham and Corn Bread.
