Party Potatoes

8 medium white potatoes (8 to 10)
8 ounces low-fat sour cream
8 ounces cream cheese
Salt and pepper, to taste
1/2 cup milk
Chives, to taste
Paprika
Servings: 6
Peel, salt and cook potatoes until tender. Drain and mash. Mix in sour cream, cream cheese, pepper and milk. Add fresh or dried chives to taste. Place potato mixture in a sprayed baking dish and dot with butter. Sprinkle lightly with paprika. Bake at 350ºF for 30 minutes.


Preparation Time: 25 minutes

Notes: Chef's Comments: Adding 1/4 cup instant potato flakes will help keep a good consistency if this dish needs to stand a little while for a dinner party.
