1 1/2 pounds lean ground beef
1 package taco seasoning mix
1/4 cup diced jalapeños (use more or less to taste) (4-ounce can works as well)
1/4 cup water
1/2 cup salsa
1/2 stick butter, melted
1 1/4 cups corn chips, finely crushed
2 cups Cheddar or Colby-Jack cheese, shredded
Sour cream (optional)
Servings: 6
1. Preheat oven to 350 degrees F.

2. Combine melted butter and corn chips to form crust in 9-inch pie plate. Press firmly, set aside.

3. In a large bowl, combine the ground beef, taco seasoning, jalapeños, and water. Mix well. Add more water if necessary.

4. Place meat mixture in pie plate and form into pie shape. Spread salsa thinly over the top. Bake for 20 minutes.

5. Add the cheese evenly over the entire top. Return to oven for another 10 minutes; or until cheese is completely melted. As it melts, it will form a cheesy layer which will trickle down the sides.

6. Remove, let cool for 5 minutes. Slice and serve. Top with sour cream, if desired.

Cooking Time: 30 minutes

Serving Ideas: Serve with fresh garden salad plus extra salsa and chips on the side.
