Candied Orange Peel

16 fluid ounces Water
8 ounces Granulated sugar
Oranges, as needed
Yield: 24 Pieces
1. Combine 8 fluid ounces (240 milliliters) of the water with the sugar in a small saucepan.

2. Bring the remaining water to a boil in a second small saucepan. Cut 24 strips of orange zest with a channel knife. Blanch the zest in the boiling water for 30 seconds, drain and add the orange peel to the sugar mixture and simmer until the peel is translucent, approximately 15 minutes.

3. Remove the peel from the liquid and spread on a sheet pan to cool.

Yield: 24 Pieces
