Caramel Green Apple Sauce with Cranberries

3 1/2 ounces Granulated sugar
18 fluid ounces Green apple juice, preheated and hot
2 Vanilla beans, split
11 fluid ounces Simple Syrup
5 ounces Dried cranberries
Yield: 1 1/4 pints
1. Caramelize the sugar in a heavy nonreactive pan. Add the heated apple juice and vanilla bean. Simmer for 5 minutes. Strain and then stir in the simple syrup and dried cranberries.

2. Reduce the mixture to a sauce consistency, approximately 15-20 minutes.

Yield: 1 1/4 pints
