Caramelized Pecans

2 ounces Granulated sugar
1 ounce Water
1 teaspoon Vanilla extract
4 ounces pecans
Yield: 6 ounces
1. Bring the sugar and the water to a full boil. Add the vanilla extract and the pecans. Stir until the sugar coats the pecans and becomes grainy.

2. Reduce heat to low and stir pecans until the sugar starts to caramelize. Cool then store in an airtight container until ready to use.

Yield: 6 ounces
