Lentil & Brown Rice Soup

1 envelope onion soup mix
4 1/2 cups water
3/4 cups dry lentils, rinsed and drained
1/2 cup uncooked brown rice
1 can coarsely chopped, whole peeled tomatoes, undrained
1 medium carrot, coarsely chopped
1 large stalk celery, coarsely chopped
1/2 tsp basil leaves
1/2 tsp oregano
1/4 tsp thyme leaves
1 tbsp finely chopped parsely
1 tbsp apple cider vinegar
1/4 tsp pepper

In large saucepan, combine onion soup, water, lentils, rice, tomatoes, carrot, oregano, thyme and basil together.
Bring mixture to a boil and simmer covered stirring occasionally 45 mins or until lentils and rice are tender.
Stir in parsely, vinegar and pepper and serve.
Great with rye bread.
