Recipe Feeder
2 lb onions (8 medium) 1 kg
5 tbsp unsalted butter 75 mL
6 cups consommé 1.5 L
6 thick slices toasted French bread 6
1-1/2 cups Swiss cheese, shredded 375 mL

Peel and slice onions as thinly as possible. Melt butter in heavy metal saucepan. When butter is light and brown add onions. Cook over low heat uncovered for 10 minutes, and covered for the last 10 minutes. When onions are melted add consommé.

Bring to a low boil then turn heat down. Simmer uncovered 20 minutes.

When soup is ready place in individual earthenware bowls. Top with crusty bread then cheese. Place in 500°F/260°C oven until fluffy and golden brown.
