Clam Chowder

Ingredients:
4 slices salt pork
1 cup onions, diced
1 cup potatoes, diced
1 cup carrots, diced
1 cup celery, diced
3 quarts water
1 can tomato soup
1 large can chopped tomatoes
4 dozen clams with juice
Salt and pepper
3 Tablespoons thyme (or enough to keep it floating)
Instructions:
Saute onions in salt pork slowly until clear, not brown. Add water and
vegetables and cook covered until vegetables are done. Add tomato
soup, can of chopped tomatoes and clams. Put plenty of thyme in it and
make sure there's always some floating.


NOTE: The clams should be steamed open and all the liquid should be added
to the soup.
