1 can (15 ounces) black eye peas, rinsed and drained
1 cup red pepper, chopped
1/2 cup green pepper, chopped
1 medium red onion, chopped
2 scallions, chopped(including stems)
1/4 cup fresh minced parsley
1 garlic clove,minced
2 tsp lime zest
2 tbl fresh lime juice
sea salt
fresh ground pepper
3 Tbl apple cider vinegar
4 tsp olive oil

Combine all. add olive oil and vinegar. Cover and refrigerate for 24 hours.
Yield -4 cups. Serving size 1/2 cup.
