Pour 8 cups boiling water over 2 cups uncooked wild rice; cover and let stand 20 minutes. Drain. Repeat 3 times, using fresh boiling water each time and adding 2 tbsp salt the last time.

Fry 8 slices bacon, diced, until crisp; drain off all but 3 tbsp fat. Add 8 green onions; finely chopped, and 12 fresh mushrooms, thinly sliced; cook until tender. Stir in rice, salt and pepper; heat through.
