Amount Measure Ingredient -- Preparation Method

1/3 c Dijon mustard
2 tbsps olive oil
1 clove garlic -- minced
1/2 tsp Italian seasoning
6 med red potatoes -- (2 lbs.), cut into chunks

Mix all ingredients except potatoes in small bowl.
Place potatoes in greased 13x9-inch baking pan. Pour mustard mixture over potatoes; toss to coat.
Bake at 425° F for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally. Garnish with fresh herb.
