1 1/2 pounds baking potatoes -- peeled
nonstick cooking spray
1/3 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon dried rosemary
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt

Preheat oven to 400ºF. Cut potatoes lengthwise into 1/4 inch thick slices, then cut the slices lengthwise into 1/4-inch-wide sticks. Place potatoes in a large bowl, lightly spray with nonstick cooking spray; toss to coat. Add the Parmesan, oregano, rosemary and pepper; toss again to coat thoroughly. Transfer potatoes to two baking sheets; bake for 40 minutes, turning every 10 minutes, or until potatoes are golden brown and crisp. Place the fries on a platter, sprinkle with salt, and serve.
