3 pounds eye of round roast
11 ounces mandarin orange segments
1 cup pistachio nuts

1. Place eye of round onto a rack in a roasting pan. Roast at 325 degrees for 60 minutes, or to desired doneness. Remove from oven, wrap in plastic, and chill thoroughly.
2. Cut slices to a thickness of 1/4-inch. Garnish each with an orange segment and chopped pistachios. Serve slightly chilled or at room temperature.
