1 pound lean ground pork
1 pound ground round
1 cup onion
3 teaspoons garlic
1/4 cup scallions
1/2 cup fresh breadcrumbs
3 each egg
1/2 teaspoon dried thyme
1/2 teaspoon ground bay leaf
1 teaspoon freshly ground black pepper
1/8 teaspoon salt
1/2 pound smoked slab bacon
Servings: 16
1. Preheat oven to 325 degrees. Combine all ingredients, except bacon. Mix lightly but thoroughly. Fry 1 tablespoon in a small skillet to test. Adjust seasonings to taste. Layout bacon slices, side by side and barely touching, onto a baking sheet. Form meat into a loaf shape and place across the middle of the bacon slices. Bring ends of bacon up to enclose the loaf. Turn loaf over on top of bacon ends.

2. Bake at 325 degrees for 90 minutes, basting often with any rendered fat remove from oven. Cool thoroughly before slicing. Serve at room temperature, with crackers or sliced breads to the side.
