1 ounce dried shrimp
1 pound snow peas
2 teaspoons garlic, chopped
2 ounces vegetable oil
1 teaspoon sesame oil
4 ounces waterchestnuts, sliced
salt, to taste

1. Soak the dried shrimp in hot water for 15 minutes. Drain well.
2. Snap the snow peas and remove the strings.
3. Blanch the snow peas and refresh.
4. Stir-fry the garlic and shrimp in the vegetable and sesame oils for 10 seconds. Add the water chestnuts.
5. Add the snow peas and stir-fry until tender, approximately 1 minute. Season to taste with salt.
