4 tablespoons butter or margarine
2 cups pumpkin, canned or fresh
1/2 cup flour
pinch of salt
pinch of baking soda
1 cup sugar
1 cup milk
2 eggs
1 teaspoon vanilla
cinnamon sugar (or just cinnamon) for topping
Servings: 8
1. Put the butter in a dish or pan measuring 8x8, 9x9, or 7x11; melt while heating the oven to 450F.

2. Put remaining ingredients in blender and whirl until smooth.

3. Pour into the melted butter and sprinkle top with cinnamon (or cinnamon-sugar). Bake for 25-30 minutes. Serve as a side dish.
