Glazed Carrots

3 tablespoons margarine
1/4 cup orange juice
1/4 cup honey
1 teaspoon orange rind
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ginger
2 cups cooked carrots
coarsely chopped sweet pickle
Servings: 6
Mix all ingredients together on med. heat for 20 min. Put in bowl and add some coarsely chopped sweet pickle, mix and serve.
