Ingredients

1 lb. Zucchini, peeled and sliced in 1/4" slices
Vegetable oil
1 15 oz. Can grated Parmesan cheese
2 cups Flour
4 Eggs

Preparation

Beat eggs in bowl. Mix flour and Parmesan cheese together in separate bowl. Heat 1/2" of vegetable oil in skillet (350 degrees). Dip zucchini in egg, then dredge in flour/cheese mixture and fry uintil golden brown. Place on paper towel lined cookie sheet.
