Serves 2

1 lb. lean beef - round steak - 8 oz. 1/2" thick - cut into strips
1 tsp. paprika
1 clove crushed garlic
2 tsp. butter or margarine
1/3 cup sliced green onions with top
1/2 small green pepper cut in strips
1/2 small red pepper cut in strips
1 small fresh tomato, diced
1/3 cup beef broth
1 1/2 tbsp. water
2 tsp. cornstarch
2 tsp. soy sauce
1 cup hot cooked rice

Sprinkle steak with paprika adn allow to stand while preparing other ingredients. Cook steak and garlic in butter until meat is browned. Add onions and peppers, continue cooking until vegetables are wilted. Add tomatoes and broth, cover and simmer about 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak and cook until thickened. Serve over fluffy rice.

Serves 6

2 1/2 lbs. beef
1 tbsp. paprika
2 cloves garlic
2 tbsp. butter or margarine
1 cup green onions
2 large green peppers
2 large red peppers
1 cup tomato
1/4 cup water
2 tbsp. cornstarch
2 tbsp. soy sauce
3 cups cooked rice

Follow same instructions as above.
