Zucchini Bread
Preheat oven to 350F
2 1/2 cups flour
1 tsp. salt
1/2 cup corn oil
1/2 cup orange juice
1 tsp. almond extract
1 1/3 cups sugar
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. cloves
3 eggs
1 1/2 cups shredded zucchini (about 2 medium zucchinis)

In a large bowl mix flour, baking powder, baking soda, salt, cinnamon and cloves.
Set aside.
With a whisk, beat eggs.
Stir in oil, sugar, juice, extract, and zucchini.
Mix well.
Add to flour mixture, stirring just to moisten.
Pour into greased loaf pans.
Bake until done when picked in center and comes out clean. (usually a minimum of 45 minutes)
Cool in pan.
If desired, ice with orange icing.
