preheat oven 350

8X8 pan sprayed with pam

put a layer of shredded hashbrowns on bottom of pan..as thick as you like.
brush hasbrowns with butter and put in oven to brown a bit

while that is being done, saute red or sweet onion...i did about 3 tbs or less, roasted red peppers, chopped, about 2 tblsp and some green and yellow summer squash chopped, I did about 6-7 frozen ones...you know they are in 1/4' circles already?

when done whisk about 6-7 eggs with a bit of milk.

when veggies are cooled add to egg mixture

take out hashbrowns
put a layer of shredded colby jack cheese on top
pour the egg mixture over

bake in oven about 25-30 minutes until eggs are set

take out and sprinkle with more cheese
serve!!! Add more veggies if you want~~
