1 1/2 cups all purpose flour (1 2/3 cups pastry flour)
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup white sugar (granulated)
1/2 cup finely chopped apricots
3/4 cup finely chopped pecans
1 egg slightly beaten
1 cup milk
1/4 cup vegetable oil

Cream together sugar, oil, and egg. Add dry ingredients alternately with milk. Add nuts and apricots.
Bake at 350F for 55-60 minutes in an 8"x4" loaf pan, or at 400F for 15 minutes for 12 muffins.
