Topping:
1/2 cup brown sugar
6 tbsp. flour
1/4 cup butter
1 tsp. cinnamon

Mix A:
1 1/2 cups brown sugar, firmly packed
2/3 cup vegetable oil
1 egg

Mix B:
1 cup buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 1/2 cups flour
2 cups peeled, diced apple
1/2 cup chopped toasted pecans

Combine first 4 ingredients in small bowl, mix until crumbly - reserve this topping.
Combine next 3 ingredients in separate bowl (Mix A).
Combine Mix B in another bowl.
Blend in flour into Mix A alternately with Mix B.
Stir until just combined.
Fold in apple and pecans.
Place batter in greased and floured tins.
Sprinkle with topping mix.
Bake at 325F for 25 minutes or until tops spring back.

Makes 15 muffins.
