Cardamom Funnel Cakes

2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon ground cardamon
1/4 teaspoon salt
2 eggs, lightly beaten
1 cup milk (1 to 1-1/4 cups)
Servings: 6 / Yield: 6 slices
Combine flour, sugar, baking powder, cardamon, and salt in a mixing bowl. Combine beaten eggs and 1 cup milk; pour into flour mixture and stir until smooth. If batter is too heavy, add additional milk. Batter should pour in a heavy stream. Pour about 1/3 cup of batter into funnel. (Hold finger over end as funnel is filled.) Hold funnel over preheated oil in deep fryer; release finger and let batter pour into fryer in a circular pattern. Fry 1-1/2 minutes; turn and fry another 1-1/2 minutes. Fry one cake at a time. Continue until all batter is used. Serve warm with powdered sugar or syrup.

Notes: Batter may be poured slowly into hot oil from a two-cup glass measure. You really don't need a funnel to make these look just like the ones you remember. Just pour the batter slowly into the hot oil from a two-cup glass measure.
