Fruit cake
Preheat oven to 300F
1 lb. butter
Juice & rind of 1 lemon or 1/3 cup lemon juice
1 lb. white raisins
10 eggs
1 lb. cirton peel
1 lb. candied pineapple
1 cup white sugar
1 lb. almonds
1 1/2 lbs. red & green marachino(candied) cherries
3 1/2 cups flour
Approx. 4 loaf pans
Mix butter, sugar, eggs and lemon juice together.
Chop fruit (if not diced already) and cover with part of the flour.
Add fruit to first mixture, then add rest of flour.
Bake for approx 1 1/2 hours or until brown.
Once cooled, wrap with waxed paper and seal tightly in freezer bags or containers and store in fridge or freezer.
