Plantation Cake

1 pkg. Betty Crocker gingerbread mix
1 pkg. (3oz) cream cheese, softened
1 cup Lemon Sauce (below)

Lemon Sauce:
1/2 cup sugar
2 tbsp. cornstarch
1/4 tsp. salt
2 cups water
1/4 cup butter or margarine
1 tbsp. grated lemon peel
3 tbsp. lemon juice
9 servings
Bake gingerbread as directed on package.
Beat cream cheese until fluffy.
Top warm gingerbread squares with rounded teaspoonfuls of cream cheese; spoon hot lemon sauce over top.

Lemon Sauce:
In saucepan, mix sugar, cornstarch and salt.
Gradually stir in water.
Cook, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Remove from heat; stir in butter, lemon peel and juice.
Tint with few drops yellow food color if you wish.
